Crispy puffed puris stuffed with pizza mixture topped with cheese and baked. A twisted unique recipe.

CHEESY PUCHKAS

Ingredients

12-16 puris or puchkas
Grated mozzarella cheese as required
Pizza sauce as required
3 tablespoons blanched corn kernels
1 small green capsicum, finely chopped
1 small red capsicum, finely chopped
Salt to taste
Dried mixed herbs for sprinkling
5-6 fresh basil leaves, torn
Cheese sauce as required
Chopped fresh parsley for garnishing

Method

1. Preheat oven to 180º C.
2. Break the top of puris or puchkas a little to make cups and arrange on a baking tray.
3. Stuff each with some cheese, dash of pizza sauce, 3-4 corn kernels, some green and red capsicum.
4. Sprinkle salt and some mixed herbs and top with some basil leaves, dash of cheese sauce and some more cheese.
5. Put the tray in the preheated oven and bake till the cheese melts.
6. Garnish with parsley and serve immediately.
