Cheesy Lemony Cake
- Soft butter 2 gm
- Olpers Cream 2 gm
- Lemon rind 1 tbsp
- Sugar 1 cup
- Eggs 3
- Self raising flour 1 ¼ cup
- Vanilla essence 1 tsp
- Yellow color few drops
- Icing sugar for dust
Pre heat oven to 180 degree c.
Grease 8 or 9 inch ring mould.
In a separate mould beat butter, cream, cheese and lemon rind until a smooth light mixture is formed.
Add in sugar, beat until light and fluffy.
Then add in eggs one at a time until just combined.
Fold in self raising flour in two batches and beat on low speed.
Add the vanilla essence and yellow color, spoon mixture into prepared pan and bake on 180 degree color 1 hour.
Turn cake onto wire rack to cool.
Dust cake with a little icing sugar.
