Cauliflower Shorba:
Ingredients:
Oil 2 tbsp
Bay leaf 1
Sliced garlic 6 cloves
Green chili 1
Salt 1 tsp
Chopped cauliflower 1 small
Water 750ml
Crushed cumin seeds 1 tsp
Method:
Heat oil and add bay leaf. Stir in the garlic and sauté until brown. Roughly chop the chili and add to the pan. Add the chopped cauliflower and salt then cover with the water and bring to the boil. Leave to simmer for about 20-30 minutes until the cauliflower is soft. Blitz the soup in a liquidizer. Return to the stove and simmer for 5 minutes. Serve in small bowls topped with a sprinkling of roasted cumin.

Irish Bread Rolls:
Ingredients:
Flour 3 cups
Baking soda 2 tsp
Cream of tartar 1 tsp
Salt ½ tsp
Buttermilk 1-1/2 cup
Butter to serve
Method:
Combine flour, baking soda, cream of tartar and salt in a bowl. Stir in buttermilk until mixture forms soft dough. Turn out onto a lightly floured surface and knead for 1-2 minutes. Using lightly floured hands, divide dough into 6 balls. Place on a tray 2cm apart and dust with flour. Use a sharp knife to score a square in top each roll. Bake at 180 degrees C for 15-18 minutes, until golden brown and rolls sound hollow when tapped. Transfer to a wire rack to cool. Serve with butter.

Apple Tomato Soup:
Ingredients:
Tomatoes 2
Chopped apples (peels reserved) 3-4
Green chili 1
Ginger 1inch piece
Coconut 2 tbsp
Salt 1 tsp
Black pepper 1 tsp
Wasabi 1 tbsp
Cumin seeds 1 tbsp
Butter 3 tbsp
Chopped coriander 2 tbsp

Method:
Make a puree of chopped apples. Cook tomatoes, apple skins, chili, ginger, coconut together and puree. Strain and season with salt, pepper, wasabi, and cook further with apple puree. Make a tempering of cumin seeds in a little butter and add to simmering soup along with some chopped fresh coriander.
