If you are bored of eating the same regular kadhi again and again, try this Bhindi Kadhi recipe where the kadhi is topped with sautéed bhindi.
BHINDI KADHI
Ingredients
150 grams lady fingers, cut into 1 inch pieces
1½ cups yogurt
2 tbsps gram flour
½ tsp turmeric powder
3 tbsps oil
1 tsp mustard seeds
¼ tsp fenugreek seeds (methi dana)
2 green chillies, chopped
1 inch ginger, chopped
A pinch of asafoetida (hing)
10-12 curry leaves
1 dried red chilli, broken
1 large onion, sliced
Salt to taste
¼ tsp red chilli powder
Red chilli oil for garnish
Steamed rice to serve
Method
1. Take yogurt in a large bowl, add gram flour and ¼ tsp turmeric powder and whisk well. Add 3 cups water and whisk till well combined.
2. Heat 2 tbsps oil in a deep non-stick pan, add mustard seeds and let them splutter. Add fenugreek seeds, green chillies and ginger, asafoetida and 10-12 curry leaves. Sauté for a minute. Add dried red chilli and mix well.
3. Add onion and mix well. Add salt and sauté for 2 minutes or till onion turns translucent. Add the prepared mixture and mix well. Cook on low heat for 15 minutes.
4. Heat remaining oil in a non-stick pan, add lady fingers and salt, red chilli powder and remaining turmeric powder and mix well. Cook for 8-10 minutes, sautéing in between.
5. Transfer the kadi in a serving bowl, top up with the prepared bhindi and garnish with chilli oil. Serve hot with steamed rice.
