BEANS FOOGATH

Ingredients

200 grams French beans, finely chopped
2 tbsps coconut oil
1 tsp mustard seeds
1-2 green chillies, chopped
8-10 curry leaves
1 large onion, finely chopped
Salt to taste
¼ cup scraped fresh coconut + for garnish
1 tbsp lemon juice

Method

1. Heat oil in a kadai, add mustard seeds and let them splutter. Add green chillies, curry leaves and sauté well.
2. Add onion and sauté till translucent. Add beans and salt and mix well. Cover and cook for 6-8 minutes.
3. Add coconut and lemon juice and mix. Take the pan off the heat. Transfer into serving bowl and garnish with coconut.
4. Serve hot with chapatis.
