Banana Raisin Fritters:
Ingredients:
Ripe bananas 4
Sugar 1-½ cups
Wheat flour 1-½ cups
Semolina ½ cup
Eggs 3
Cardamom powder 1 tsp
Nutmeg powder ½ tsp
Vanilla essence 1 tsp
Raisins 1 tbsp
Clarified butter as required
Method:
Mix sugar with 1 tbsp clarified butter and adds in the eggs and beat well. Mix wheat flour and semolina and add the mashed bananas, cardamom and nutmeg powders, vanilla essence, raisins, set aside for few hours and then heat clarified butter, add in tablespoonfuls of the fritter batter and deep fry till golden. Let excess clarified butter drain and then serve hot for tea.

Omelette Curry:
Ingredients for Omelette:
Eggs 4
Spring onions (chopped) 2
Green chilies (chopped) 6
Coriander leaves ¼ cup
Red chili powder 1 tsp
Ginger garlic paste 1 tsp
Turmeric ½ tsp
All spice powder ½ tsp
Salt to taste
For Curry:
Onions (sliced) 2
Tomatoes (chopped) 2
Curry leaves 2
Lemon juice of 2 lemons
Salt to taste
Oil as required
To Grind:
Coconut 1 cup
Whole red chilies 12
Cashew nuts ¼ cup
Coriander seeds 1 tbsp
Cumin seeds 1 tsp
Fennel seeds 1 tsp
Poppy seeds 1 tsp
Sesame seeds 1 tsp
Dry mango powder 1 tsp
Turmeric ¼ tsp
Ginger 1inch piece
Method:
Heat oil, add onions and sauté till golden add curry leaves and tomatoes and cook till soft. Add ground masala and water and cook, add salt, simmer and set aside. In a bowl mix ingredients for omlette. Heat oil, add a ladleful of omlette mixture and cook on both sides till done. Repeat till all mixture is used up and a few omlettes are made. Set aside. When cold cut in cubes or strips. Gently add omlette pieces in the hot curry just before serving. Add lemon juice and serve with boiled rice.
