Awadhi Daal:
Ingredients:
Split Red gram 1-1/2 cup
Green chilies 3-4
Turmeric ¼ tsp
Salt to taste
Milk 1 cup
Yogurt 2 tbsp
Green coriander for garnishing
For tempering:
Clarified butter ½ cup
Whole red chili 4-5
Asafoetida 2 pinch
White cumin ½ tsp
Method:
Soaked split red grams. Put it on flame to cook .when boil comes add green chili ,turmeric and salt mix and cook till lentil turns tender .then add milk ,yogurt and ½ cup of water and mix and further cook .for tempering heat oil and then add whole red chili and Asafoetida fry .after this white cumin mix and fry .finally add in lentils then garnish with coriander and serve .
Creamy Mix Chaat:
Ingredients:
Boiled chickpeas 2 cups
Bananas 8
Sweet potatoes 2
Red beans 1 cup
Boiled potatoes 3-4
Sugar 2 tbsp
Salt to taste
Yogurt 1 cup
Cream 4 tbsp
Chaat masala 2 tbsp
Sweet chutney 6 tbsp
Lemon juice 1 tbsp
Method:
In a bowl mix boiled chickpeas, boiled potatoes and red beans. Also add sweet potatoes and bananas in it. Now add lemon juice and chaat masala. Mix salt, sugar and cream in yogurt. Now in a dish put mix ingredients and pour yogurt mixture over it and garnish with chutney.
Ghee Roast Mutton Chops:
Ingredients:
Mutton chops 750 grams
Turmeric ½ tsp
Ginger garlic paste 1 tbsp
Clarified butter ½ cup
Yogurt ½ cup
Curry leaves 10-12
For Masala ingredients:
Cayenne chili (whole) 2-3 large
Whole coriander 1 tbsp
White cumin 1 tsp
Fennel ¾ tsp
Black pepper 8-10
Cloves 4-5
Star anise 1
Whole red chili 4
Cinnamon stick 1 pieces
Further ingredients:
Ginger 1 medium piece
Garlic 4-5 cloves
Lemon juice 2 tbsp
Salt to taste
Clarified butter 4 tbsp
Method:
Heat the clarified butter and add mutton chops ,ginger garlic paste and turmeric add and roast .then cook till meat tenders .now in a frying pan add Kashmiri red chili(cayenne chilli) ,whole coriander ,white cumin ,black pepper ,cloves ,star anise ,whole red chili and cinnamon add and roast .after this add ginger ,garlic ,salt and lemon juice add and then grind the masala .now add 4 tbsp clarified butter and roast the masala .then add cook mutton chops and yogurt mix .finally add curry leaves and leave on dum and serve hot .
