Ajwain Aalu mirch:

Ingredients

Potatoes 2
Capsicum 2
Oil ¼ cup
Carom seeds ½ tsp
Garlic crushed 1 tbsp
Tomatoes 3
Turmeric ¼ tsp
Coriander powder 2 tsp
Salt 1 tsp
Chili powder ½ tsp heaped
Allspice ½ tsp
Sweet chili sauce 3 tbsp
Sirarcha sauce 2tbsp
Method

Cut potatoes into thin fingers light potato chips, soak in cold salted water for 10 mins, drain and dry, deep fry potatoes on medium flame till golden brown, keep aside, heat oil add ajwain, then add garlic crushed, fry till light golden, add blended tomatoes, cook for 5 mins, add all the dry spices, fry till oil separates, add Sweet chili sauce , siracha sauce with ¼ cup water, add capsicum, cook for 2 mins, add fried potatoes, mix well, serve hot.

Gobhi kachumber:

Ingredients

Cauliflower cut into florets ½ kg
Oil ¼ cup
Cumin seeds 1 tsp
Ginger finely chopped 2 tbsp
Green chilies 2 finely chopped
Turmeric ½ tsp
Chili powder 1 tsp
Coriander powder 1 tsp heaped
Allspice ½ tsp
Tomatoes 2 chopped
Salt 1 tsp
Dried fenugreek 1 tsp
Coriander leaves chopped 2 tbsp
Sambal oleak 2tbsp
Sweet chili sauce 2tbsp

Method

Heat oil in a wok, add cumin seeds, add chopped ginger, green chilies, turmeric, chili powder, dhania powder and allspice, cook for a min with ¼ cup water, add chopped tomatoes, Sambal oleak and Sweet chili sauce fry till oil separates, add chopped cauliflower with 1 ½ cup water, salt, cover and cook for 20 mins until cauliflower is well cooked, slightly mashed, add kasuri methi, serve hot sprinkle with fresh coriander.

Makhani mirch makai:

Ingredients

Tikka boti ½ packet
Green chilies 4 julienne
Onion 1 grinded
Cashew nuts 10 grinded
Tomatoes 4 blended
Finely chopped ginger 1 tbsp
Oil ½ cup
Turmeric ¼ tsp
Coriander powder 1 tsp
Allspice ½ tsp
Salt 1 tsp
Chili powder ¾ tsp
Water 1 cup
Milk 1 cup
Cream 2 tbsp

Method

Heat ¼ cup oil, fry green chilies for 2 mins and remove, add Tikka boti, fry for 3 mins, remove and keep aside. In the same oil add onion, fry till light, add dry spices with blended tomatoes, cook for 5 mins till oil separates, add cashew paste with water, salt, add fried Tikka boti , simmer for 10 mins till gravy thick, add grated ginger with milk, cook till gravy thick, lastly add fried green chilies and cream, remove and serve.

Aalu matar:

Ingredients

Potatoes 6-8 small
Green Peas boiled 1 cup
Sesame seeds 2 tsp
Oil ½ cup
Cumin seeds 1 tsp
Onion 2
Tomato puree 4 tbsp
Cashew nuts 12
Salt 1 tsp
Turmeric ½ tsp
Allspice ½ tsp
Chili powder 1 tsp
Mango powder ¼ tsp
Chopped coriander 2 tbsp
Green chilies 3
Sambal oleak 1tbsp
Chili garlic sauce 2tbsp

Method

Boil potatoes until just tender, do not overcook, peel and cut each potato into two equal halves, dry roast sesame seeds on tawa until golden brown , keep aside, heat oil add cumin seeds, onion rings, cook until onion light golden, add cashew nuts , stir fry till golden, add tomato puree and cook till dry, add dry spices, green chilies, fresh coriander, Sambal oleak and chili garlic sauce cook for 2 mins with ¼ cup water, add potatoes, fry gently for 5 mins, take care not to break the potatoes, sprinkle sesame seeds, keep some for garnishing, mix gently so that the potatoes are well coated with sesame seeds, add boiled peas, mix well, remove from fire, transfer to a serving dish, sprinkle some more til on the potatoes and serve.
