As Eid is near, many readers have requested me to share the recipe of Methi Kaleji|. So here is an easy n yummy version of cooking it.

Methi Kaleji:

Ingredients:
Mutton liver (small pieces) ½ kg
Fenugreek (chopped) ½ kg
Tomatoes (chopped) 2
Onions (chopped) 1 cup
Ginger Garlic Paste 1 tbsp
Turmeric ½ tsp
Chili Powder 2 tsp
Coriander Powder 2 tsp
All spice powder 1 tsp leveled
Salt 1 tsp
Oil ½ cup
Dried fenugreek 1 tbsp

Method:
Heat oil in a pan. Fry onion for 5 minutes. Add ginger garlic paste with all the dry seasonings and chopped tomatoes. Fry for 5 mins. Add in chopped fenugreek. Cover and cook for 5 mins. Add liver cook for just 10 mins. Lastly add in salt, all spice powder. Fry well and remove. Served and garnish with sliced green chili.

Chicken Pakora:

Ingredients:
Chicken ½ kg
Ginger Garlic Paste 2 tsp
Lemon Juice 1 tbsp
Tikka Masala 1 tbsp
Ingredient for batter:
Gram Flour 1 cup
Salt 1 tsp
Dried Mango Powder 1 tsp
Carom Seeds ½ tsp
Tikka Masala 1 tbsp
Baking Powder ½ tsp
Chaat Masala 1 tbsp

Method:
Give cuts on chicken. Marinate chicken with ginger garlic paste,lemon juice and tikka masala for 1 hour. Make batter with all the given ingredients. Add marinated chicken to batter, deep fry until crisp. Put on a platter. Sprinkle chaat masala. Serve with mint chutney.

Pineapple Split Cake:

Ingredients:

Digestive Biscuits 1 packet
Milk 2 cups
Cream cheese 1-1/2 cup
Pineapple cubes ½ cup
cream 1 packet
Brown Sugar 4tbsp
Corn flour 2 tbsp

Method:
Crush the digestive biscuits. Take 2 cups milk and 2 tbsp cornflour. Mix it and make custard. Take a dish and layer the crushed biscuits, layer the custard. Beat together the cream cheese, cream and 2 tbsp brown sugar and and add in biscuits on the top. Add in pineapple pieces on the top and cream, add in chopped almonds. Pine apple split cake is ready to serve.
