As the season of mango is going around, this kadhi is sweet and sour which contains both ripe and unripe mangoes and is best enjoyed when served hot.
AAMRAS KI KADHI – (Serves – 2)
Ingredients
¾ cup raw mango pulp
¾ cup ripe mango pulp
¼ cup gram flour (besan)
¾ cup buttermilk
Salt to taste
2 tablespoons ghee
1 teaspoon mustard seeds
¼ teaspoon fenugreek seeds (methi dana)
12-16 curry leaves
2 green chillies, slit
¼ teaspoon asafoetida
Boondi for garnishing
Fresh coriander sprig for garnishing
Method
1. Whisk together raw mango pulp, ripe mango pulp, gram flour, buttermilk and salt in a bowl till smooth.
2. Heat ghee in a non-stick pan. Add mustard seeds and let the seeds splutter.
3. Add fenugreek seeds, curry leaves, green chilies and asafoetida, mix well and sauté for 2 minutes.
4. Add mango pulp mixture and stir. Adjust consistency by adding little water, add salt, stir to mix and boil on low heat for 5-10 minutes.
5. Garnish with boondi and coriander sprig and serve hot with steamed rice.
