Directions

Step 1

In a small bowl, soak saffron in 2 tablespoons of warm water and set aside.

Step 2

In a pot, bring 2 cups of water to a boil. Add rice and a pinch of salt. Cover and simmer for 15 minutes.

Step 3

While rice cooks, zest and juice the orange and lemon. Set aside.

Step 4

Toast almonds in a dry pan over medium heat for 3 minutes, stirring frequently.

Step 5

Once rice is cooked, fluff with a fork and stir in saffron water, citrus zest, and juice.

Step 6

Drizzle with honey, garnish with toasted almonds and mint. Serve warm.
