Directions

Step 1

Soak saffron in warm water and set aside. Rinse the basmati rice until the water runs clear and soak for 30 minutes.

Step 2

In a large pot, heat ghee and add cumin seeds. Once they splutter, add sliced onions and sauté until golden brown.

Add ginger garlic paste and green chilies, sauté for a couple of minutes. Add chicken pieces and cook until they turn white.

Step 4

Mix in yogurt, coriander powder, and salt. Cook on medium heat until chicken is tender and the oil starts to separate.

Step 5

Add mint leaves and stir well.

Step 6

In a separate pot, bring water to a boil. Add soaked rice and cook until 70% done, then drain.

Step 7

Layer the partially cooked rice over the chicken mixture, drizzle the saffron water on top.

Step 8

Cover and cook on low heat for 15 minutes until the rice is fully cooked.

Step 9

Mix gently before serving to combine the layers. Serve hot with raita or salad.
