Directions

Step 1

Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes.

Step 2

In a large pot, bring water to a boil, add salt, and cook rice until it’s 70% done. Drain and set aside.

Step 3

In a separate pan, heat oil and fry sliced onions until golden brown. Remove half for garnishing.

Step 4

Add ginger, garlic, and tomatoes to the pan with remaining onions.

Step 5

Cook until tomatoes soften, then add chicken pieces.

Step 6

Mix in yogurt, coriander, garam masala, and salt. Cook until chicken is tender.

Step 7

Layer cooked chicken and rice in a pot.

Step 8

Sprinkle mint, saffron dissolved in warm milk, and fried onions.

Step 9

Cover and cook on low heat for 10 minutes. Serve hot.
