Directions

Step 1

Soak the basmati rice in water for 30 minutes. Drain and set aside.

Step 2

In a large pot, heat oil and fry the onions until golden brown. Remove half for garnishing.

Step 3

Add ginger, garlic, cinnamon, cardamom, and cloves to the pot. Sauté for 2 minutes.

Step 4

Add chicken to the pot and cook until browned. Stir in yogurt and cook for 10 minutes.

Step 5

Add soaked rice on top of the chicken.

Step 6

Sprinkle saffron soaked in warm milk over the rice.

Step 7

Cover the pot and cook on low heat for 20 minutes until the rice is fully cooked.

Step 8

Garnish with fried onions and serve hot with raita or salad.
