Citrus Herb Chicken with Almond Saffron Freekeh is a delightful fusion of vibrant flavors and textures. Originating from Middle Eastern cuisine, this dish combines succulent chicken infused with zesty citrus and aromatic herbs, paired with nutty, slightly chewy freekeh. The freekeh is elevated with almonds and saffron, adding a luxurious touch to the earthy grain. Directions

Step 1

Preheat the oven to 200°C (400°F). Zest and juice the orange and lemon into a bowl, then add minced garlic, thyme, salt, and pepper.

Step 2

Place the chicken breasts in a dish and pour the citrus herb marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.

Step 3

Meanwhile, rinse the freekeh under cold water. In a pot, bring 2 cups of water to a boil, add the freekeh, saffron, and a pinch of salt. Reduce heat and simmer for 20 minutes.

Step 4

Once freekeh is cooked, drain any excess water and fluff with a fork.

Step 5

Add toasted almonds and mix well.

Step 6

Heat olive oil in a skillet over medium-high heat. Sear the marinated chicken breasts for 3-4 minutes on each side until golden brown.

Step 7

Transfer the chicken to the oven and bake for 15 minutes or until fully cooked. Serve the chicken over a bed of almond saffron freekeh.
