Directions

Step 1

Rinse the rice in cold water until the water runs clear. Soak for 30 minutes, then drain.

Step 2

In a large pot, bring water to a boil. Add salt and the soaked rice. Cook until 70% done, then drain and set aside.

Step 3

In a pan, heat oil and fry onions until golden brown. Remove half for garnishing.

Step 4

Add ginger, garlic, and chicken to the remaining onions. Cook until the chicken is no longer pink.

Step 5

Stir in yogurt, cumin, coriander, garam masala, saffron, and cardamom.

Step 6

Cook until the oil separates from the mixture.

Step 7

Layer the chicken mixture and rice in a large pot. Top with fried onions. Cover and cook on low heat for 20 minutes.
