Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Soak it for 30 minutes, then drain.

Step 2

Heat oil in a pan and fry the onions until golden brown. Remove half for garnishing.

Add garlic, ginger, and chicken to the remaining onions. Cook until the chicken is no longer pink.

Step 4

Stir in yogurt, garam masala, and salt. Cook until the chicken is tender and sauce thickens.

Step 5

In a separate pot, bring water to a boil, add rice, and cook until 70% done. Drain.

Step 6

Layer the chicken and rice in a pot, sprinkle saffron, mint, and reserved onions on top. Cover and steam for 10 minutes.
