Directions

Step 1

Wash and soak the basmati rice in water for 30 minutes. Drain and set aside.

Step 2

In a large pot, heat oil and sauté the sliced onions until golden brown. Remove half of the onions and set aside for garnishing.

Add ginger garlic paste to the pot and sauté for 1 minute.

Step 4

Add chicken pieces and cook until they are no longer pink.

Step 5

Mix in yogurt, coconut milk, salt, garam masala, and saffron. Stir well and cook until chicken is tender.

Step 6

In a separate pot, boil rice with salt until half cooked. Drain and layer over the chicken mixture.

Step 7

Sprinkle basil leaves and fried onions over the rice. Cover and cook on low heat for 15 minutes. Serve hot.
