Directions

Step 1

In a small bowl, mix saffron with 1 Tbsp of warm water and let it steep for 5 minutes.

Marinate the chicken breasts with saffron water, juice of one lime, 1 Tbsp olive oil, salt, and pepper. Set aside for 15 minutes.

Rinse quinoa under cold water. Cook quinoa in a pot with 2 cups of water until fluffy, about 15 minutes.

Step 4

Toast almonds in a dry pan over medium heat until golden. Set aside.

Step 5

Grill the chicken on a preheated grill for 6-7 minutes per side until cooked through.

Step 6

In a bowl, combine cooked quinoa, toasted almonds, diced cucumber, and the remaining lime juice. Serve alongside grilled chicken.
