Directions

Step 1

In a bowl, mix tamarind paste, grated ginger, minced garlic, olive oil, salt, and pepper. Add chicken and coat well. Marinate for 30 minutes.

While the chicken marinates, rinse the freekeh under cold water. In a pot, bring 2 cups of water to a boil. Add freekeh and a pinch of salt. Lower heat and simmer for 20 minutes.

Toast the almonds in a dry pan over medium heat until golden brown. Set aside.

Heat a grill pan over medium heat. Cook the marinated chicken for 6-7 minutes on each side until fully cooked.

Once the freekeh is cooked, fluff it with a fork and mix in the toasted almonds and chopped mint leaves.

Serve the grilled chicken over the almond mint freekeh. Garnish with extra mint leaves if desired.
