Directions

Step 1

Rinse the basmati rice in cold water until the water runs clear. Soak the rice for 30 minutes, then drain.

Step 2

In a large pot, heat oil over medium heat and add sliced onions. Sauté until golden brown and set aside.

Add chicken pieces to the pot, along with garlic, ginger, garam masala, cumin, coriander, and salt. Cook until the chicken is browned.

Mix in yogurt and half of the fried onions. Cook for another 5 minutes until the chicken is well-coated with spices.

Layer the soaked rice over the chicken, then pour in 4 cups of water. Cover and cook on low heat for 20 minutes.

Step 6

Once cooked, garnish with remaining fried onions, mint, and cilantro. Serve hot.
