Directions

Step 1

Marinate the chicken breasts with juice of two lemons, chopped basil, 1 Tbsp olive oil, salt, and pepper. Allow to marinate for at least 20 minutes.

In a saucepan, bring chicken broth to a boil. Add quinoa, reduce the heat, cover, and simmer for 15 minutes or until the liquid is absorbed.
