Directions

Step 1

Soak azuki beans in water overnight. Drain and rinse before use.

Cook the beans in 500 ml of water until tender, about 30 minutes.

Add sugar and a pinch of salt to the beans.

Simmer until sugar dissolves and mixture thickens.

Peel and cube the kabocha. Steam until soft, then mash into a smooth paste.

Cook over low heat until thickened.
