Directions

Step 1

Soak dried red beans overnight or use quick-soak method.

Step 2

Heat olive oil in a large pot. Sauté onion, bell pepper, celery, and garlic until softened.

Step 3

Add sausage slices and cook lightly.

Step 4

Drain beans and add to pot along with chicken broth, bay leaf, Cajun seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer 60–75 minutes until beans are tender and creamy.

Step 5

Adjust seasoning, remove bay leaf, and serve beans hot over cooked white rice.
