Directions

Step 1

Soak the glass noodles in warm water for 30 minutes, then drain and set aside.

Step 2

Thinly slice the beef and marinate it with 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Let it sit for 20 minutes.

Step 3

Blanch the spinach in boiling water for 30 seconds, rinse in cold water, squeeze excess water, and cut into smaller pieces.

Step 4

Julienne the carrot and onion. Slice the mushrooms thinly. Mince the garlic.

Step 5

In a hot pan, add a bit of oil and stir-fry the marinated beef until cooked. Remove and set aside.

Step 6

In the same pan, stir-fry the mushrooms, carrot, and onion with a bit of soy sauce until tender. Add minced garlic and stir for another minute.

Step 7

Cook the noodles in boiling water for 7 minutes, then drain and rinse with cold water. Toss with 1 tablespoon of sesame oil.

Step 8

Scramble the eggs in a separate pan and cut into thin strips after cooking.

Step 9

In a large bowl, combine noodles, beef, vegetables, spinach, and egg strips. Add remaining soy sauce and sesame oil, then mix well by hand or tongs.

Step 10

Garnish with sesame seeds if desired and serve warm or chilled as preferred.
