Directions

Step 1

Boil the noodles as per packet instructions. Drain and rinse with cold water. Set aside.

Step 2

Finely chop the garlic, carrot, capsicum, cabbage, and spring onions.

Step 3

Heat chili oil in a wok on high flame. Add garlic and sauté for 30 seconds.

Add carrot, capsicum, and cabbage. Stir-fry for 3–4 minutes until slightly tender but still crunchy.

Add the spring onions and stir for another minute.

Step 6

Add Schezwan sauce and soy sauce.

Step 7

Mix well until vegetables are coated evenly.

Add the boiled noodles to the wok and toss everything together gently.

Sprinkle salt and continue tossing until all ingredients are well combined and heated through.

Check seasoning and adjust spice or salt if needed.
