Directions

Step 1

Boil the potatoes, peas, and cabbage until soft. Drain and set aside.

In a pan, heat 2 tbsp of butter and sauté chopped onions until golden brown.

Add chopped tomatoes and cook until they turn mushy.

Add chopped capsicum and cook for 5 minutes.

Add the boiled vegetables to the pan and mix well.

Use a masher to mash the vegetables directly in the pan for a coarse texture.

Sprinkle Pav Bhaji Masala and salt. Mix thoroughly and cook on low heat for 15 minutes.

Add a little water if the mixture is too thick. Stir occasionally to prevent sticking.

Step 9

In a separate pan, toast the pav with the remaining butter until golden brown.

Step 10

Garnish the bhaji with chopped onions and a squeeze of lemon. Serve hot with toasted pav.
