Directions

Step 1

Wash the mutton thoroughly and let it drain.

Step 2

In a bowl, whisk yogurt until smooth. Set aside.

Step 3

Slice onions and fry them in oil until golden brown. Remove half and crush for garnish.

Step 4

In the same pot, add ginger and garlic paste. Sauté until fragrant.

Add mutton and cook on high heat until it changes color and releases juices.

Mix in coriander powder, cumin seeds, cardamom, cloves, and salt. Cook for 5 minutes.

Add whisked yogurt and continue to cook, stirring occasionally to prevent curdling.

Grind almonds into a paste and add to the pot. Cook on low flame until oil separates.

Add water as needed, cover, and simmer for 45–50 minutes or until mutton is tender.

Step 10

Finish with garam masala and fried onion. Simmer for 5 minutes and serve hot with naan or rice.
