Directions

Step 1

Heat clarified butter in a large pot over medium flame.

Step 2

Add chopped onions and sauté until golden brown.

Step 3

Mix in garlic and ginger, stir for a minute until fragrant.

Add beef pieces and cook until meat changes color on all sides.

Step 5

Sprinkle nihari masala and salt, then mix thoroughly to coat the meat evenly.

Step 6

Pour in 5 cups of water and bring to a boil. Reduce heat and let simmer for 60 minutes.

Step 7

In a separate bowl, mix wheat flour with 1 cup of water to make a smooth slurry.

Step 8

Gradually add the flour slurry to the stew, stirring continuously to prevent lumps.

Step 9

Simmer the mixture for another 20–30 minutes until the gravy thickens.

Step 10

Garnish with fresh coriander before serving hot with naan or rice.
