Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes.

In a large pan, heat 2 Tbsp of oil. Add the cumin seeds and cardamom pods, sautéing until fragrant.

Add the chopped onions, ginger, and garlic to the pan. Cook until the onions are golden brown.

Stir in the chicken pieces and cook until they turn white.

Add coriander powder and sliced green chilies.

Drain the rice and add it to the pan. Pour in 4 cups of water and bring to a boil.

Step 7

Lower the heat, cover, and simmer for 15 minutes. Stir in diced mango, cover, and cook for an additional 5 minutes until rice is tender.
