SCHEZWAN POHA

Ingredients

3 cups Red Rice Poha (Thick)
2 tbsps oil
1 spring onion bulb, chopped
1 tbsp chopped garlic
½ tbsp chopped ginger
1 small carrot, peeled and chopped
6-8 French beans, chopped
3 tbsps Schezwan Sauce
1 tsp soy sauce
Salt to taste
Crushed black peppercorns to taste
¼ small cabbage, shredded
1 stalk spring onion greens, chopped

Method

1. Transfer Red Rice Poha in a sieve and wash thoroughly. Set aside for 10 minutes.
2. Heat oil in a nonstick wok. Add spring onion bulb, garlic, ginger and sauté for a minute.
3. Add carrots and sauté for a minute. Add French beans and continue to sauté for a minute.
4. Sprinkle water and mix well. Add Schezwan sauce, soy sauce and mix well. Add the soaked poha, salt, crushed black peppercorns, cabbage and mix well.
5. Sprinkle some water, cover and cook for 5-6 minutes. Sprinkle half the spring onion greens and mix well.
6. Serve hot garnished with remaining spring onion greens.
